    Dead lobsters decay rapidly- hence the practice of cooking live. Tinned or frozen overcomes that objection- but quality suffers.

    It’s primarily a matter of matching the bean’s density. Heavier items may be counterbalanced with lighter ones- but we have yet to meet the minimum wage-monkey that notices.
